Erin’s Favorite Lemon Squares

Erin's Favorite Lemon SquaresI’ve been working on a big project for most of this year. I am taking my mom’s cookbook and editing it and the plan is to re-issue it in a nice hardcover edition sometime next year. As I’ve been working on it, it’s been interesting coming across old recipes that I kind of forgot about. I’ve done a little bit of entertaining this summer and my recipe du jour right now are these simple Lemon Squares. They’re easy to make and they’re aways a crowd favorite.

Recipe Notes

Make sure to get as much zest and juice as you can from the lemons. The strong lemon kick is what makes these bars amazing.

Use a sandwich bag or piece of cling wrap on your hand to pat down the crust into the pan. It will prevent the mixture from sticking to your hands.
